No weekend in pictures this Monday because honestly, I didn’t do that much… But I am sharing the recipe for this Pumpkin Bread my mom made on Sunday! It’s so good, it tastes like ginger cookies or Belgian speculaas!
I wasn’t sure if I would like pumpkin bread, since I’m not that into pumpkin spice or pumpkin in general. But, I love this recipe. The recipe my mom used is not plant-based but if you’d like to make the plant-based version of this, just replace the eggs with apple sauce and the butter with vegan butter!
