Find out what I did this weekend! It involves a day trip to Maastricht, good vegan food and more!
My parents and I visited Maastricht in the Netherlands on Saturday. We walked around for a while and then got lunch at Livin’ Room. They have a ton of vegetarian and vegan options and I got the Livin Vega Sandwich and organic apple juice and it was great! We payed about €26 for three people, so if you’re looking for a cheap but super healthy and cozy place to eat, I definitely recommend Living’ Room.
Oh and on Saturday night, we had fries. It’s all about balance, haha! We picked up some vegetarian nuggets from Jumbo in Maastricht and fried them in our air fryer. They actually tasted like chicken and had the same texture, but they where soy-based, so I’m going to go get more of those!
On Sunday, I took a chill-pajama-day as I like to call it 🙂 I wrote a little in the bullet journal Camille, Heleen and Lukas got me for my birthday, completed my weekly list in “the 52 lists project”, cleaned out my room and added some pieces I bought in Maastricht to my wardrobe.
For lunch, I made my all-time favorite quick and easy vegan noodle soup. Some of you have been asking how I make it, so that recipe will be up soon! It literally takes 15 minutes to make and it’s the best comfort food.
It’s still Sunday as I’m writing this. I’m heading to a rehearsal for Fame in a couple of hours and after that I’m reuniting with my bed. 😉 Oh and here’s the good news: we have the day off on Tuesday!
