What I Eat In A Day #2

You guys really seemed to like my first What I Eat in a Day blog post, so I decided to keep on sharing my favorite plant-based meals with you. Let’s get into it!

Breakfast

On this day, I opted for some granola with a peach and some coconut flakes. For a plant based milk, I like to use rice milk. I chose one with added calcium. This kept me full for quite a while. But, I did do some baking, which brings me to the second part of this blog post.

Snack

For a snack, I decided to do some baking. I found this recipe for banana oat cookies on Pick Up Limes, one of my favorite websites on plant-based eating. They turned out really good so I might’ve had multiple…

Lunch

This lunch though… I mean, THIS LUNCH. It’s basically vegan noodle soup and oh my it’s the best comfort food ever! How did I make it? I boiled some water and added two vegetable stock cubes, some soup vegetables and just let that cook. Then, I added some pepper and rice noodles and let it cook until the noodles were soft. Honestly, this is the best food for fall and winter. This is definitely on my list of use-again recipes.

Dinner

For dinner, we did some barbequing. I had a Linda McCartney vegan burger, some avocado and a sweet potato. The burger wasn’t really my favorite… I don’t like barbeque sauce and it did taste like that so that was kind of a bummer. But nothing a good amount of ketchup can’t cover up 😉 . For dessert, I might’ve had some more of those banana oat cookies.

Today is my brother’s birthday. We went to the Antwerp Zoo yesterday to celebrate because he’d been wanting to go there for years. We celebrated yesterday because I’m off rehearsing for the entire day. Opening night with Legally Blonde is approaching and we’re really excited about that. You can still buy tickets to come see the show on 24, 25, 26 November and 1, 2 December. Anyway, happy birthday Julien!
